Buckwheat Pancakes with Maple Syrup & Warm Berry Compote; and - appropriately - a Croque-Maman.
Start your meal with the "Little Delicacies": house-cured wild sockeye salmon; bison cretons; amber chutney; roasted nuts;
a selection of Canadian cheeses; dried fruits and a green olive tapenade.
